I have been looking at the pictures of different themes people have installed, along with different apps and I really want to be able to do this. I have researched the steps and it is still a little confusing for me. I figure the only way to figure it out is to do it. My question is what are the possible problems I can run into. Is it possible to completely screw up the phone? I know it voids the manufacture warranty, but what other problems can occur? Thanks.

Also, I do not want to change SIMS, or carriers, or anything like that, Just be able to customize the UI

Some iPhones have stability problems when they have too many things in them. Just run all the applications you need and want. SummerBoard is usually very stable, unless you dim the wallpaper. Yes, you can ruin your iPhone but a simple Restore does the trick of bringing it back to life. Don't fiddle with it too much though.

Hope that helped
