Currently I have a WD Raptor as a boot drive. I love the performance but hate the noise and power it sucks up.

Anyone have any recommendations for a new fast SATA boot drive?

I dunno, I have two IBM/Hitachi DeskStar 7K250 250GB SATA drives. They're pretty quiet and fast. I imagine that any SATA 7200RPM drive from any of the major vendors would be nice and quiet compared to a Raptor.

Went with the Maxtor SATA II MaXLine. From the reviews it sounded like the fastest according to recent tests.

"February 4th, 2006 -- New Maxtor SATA II MaXLine appears to be a screamer, according to the tests run by AMUG. The reported 70MB/s sustained write speed makes it the fastest 7200rpm SATA II drive and rivals the Raptor 10K in sustained transfer speeds. That's model 7V300F0 which is a bargain at $130 for 300GB."

There are enclosures you can buy from the PC world that are made to reduce sound of a hard drive and will mount internally in a 5.25" bay. Not sure if it will fit in your mac, but it be worth a google or two.
