Office Open XML is the new format system introduced in MS Office 2007, as a replacement for the .doc, .xls, .ppt, etc files that have traditionally been created by Office.
Limited converters exist, including one for Word documents only for Mac users (a standalone tool -- it's not an Office 2004 inline translator, so the docs cannot be opened directly or saved in the new format). The OOo team are also at work on implementing it in OOo, and their preliminary converter is in NeoOffice as well.
