iPhone Haven't Jailbroken In A While

Last iPhone I had was the 4.

Now, I have an iPhone 5S.

Before, if something went wrong, we were able to restore to a previous jailbreakable build.

It is my understanding that we can no longer do this.

So, for instance if you're on 7.0.4 and Apple releases 7.1 and something happens when your JB'd on 704 - you are stuck and have to restore to 7.1.

Is this correct?

That is correct. You can not downgrade the iPhone 5S to a lower iOS version.

Those iPhone 4 days were shsh blobs and running TSS server to restore older builds are over unfortunately.

Well that isn't good.

Although, I never really had any major issues while I was JB'd where I needed to restore.

Just JB'd 7.0.4 on my 5S.

Hopefully it's smooth sailing from here.

Yep, just don't go installing everything you see on cydia and you should be fine.

Or go through and try everything now, while you can still JB the current iOS just to get it out of your system

Coolstar is working on a restore tool for IOS7 from what I read in twitter a few days ago. Forgot the name of it though possibly Semi-Restore?
