I have recently been looking on the web for some more themes that are not on Cydia and I am having a small problem. I use open ssh and winSCP to connect to my iphone and that is fine but I cannot find my summerboard folder to put the themes in. I have read it is in var/mobile/library/SummerBoard/Themes folder but the summerboard folder is nowhere to be found. Am i looking in the wrong place or is there an additional step I am missing?

You mean Winterboard? Summerboard is an "older" way of theming that Winterboard is compatible with. I believe you are looking for the /private/var/stash/Themes.xxxxxx folder. Check out this site for some great info:
