Just a thought is it possible to replace the hard drive in the latest mini with an SSD with 10.8 installed.
Anyone done something like this.
Would appreciate any advise.

It won't work, because 10.8 does not support the hardware inside the newest Mini.

Besides, there are security holes that remain unmatched in both 10.8 and 10.9, but were patched in 10.10.3.
 
The latest Mac mini came with 10.10 Yosemite, so you would have to upgrade from 10.8 to 10.10 using another Mac before putting the SSD into the Mac mini. Or alternatively you could perform an internet recovery on it to get 10.10 installed on the SSD.
