Open the Health app - > Health Data -> Search- > Cholesterol -> In the upper right hand corner should be a "+" icon, that will allow you to add your cholesterol. As for triglycerides, that didn't come up in the search when I tried it.

I only found a place to add dietary cholesterol as in keeping track of what u ate that day. Not the results from a blood test.

Then it is possible that Apple does not have the 2 data fields in the Health app. Could you reach out to Apple's tech support and ask them?
