Looking at both current models, the only key difference that might impact my use cases is the difference between the heart rate monitor in the two devices.

Im hoping someone has some first hand experience, or even better, if there might be a detailed review on the difference in the heart rate monitor in both current models. Is the 5 series heart monitor worth the extra cost?

There's no ECG on the series 3. I'm not sure in differences in the heartrate functionality between the two.

I’ve tested the heart rate monitor on the 2,3,4 and 5. Several times with workouts and using two at a time. While the 4 and 5 are 2nd generation heart rate sensors I find not much difference with these and the 2 and 3. The lag is there with the 2 and 3 but sometimes not. I still believe to this day the real world difference came with the watch OS5 update year before last. That’s when all of my Watch’s came alive and got heart data within 95-98% of a chest strap which I also tested against each watch with.

What kind of activities were you evaluating the AW's accuracy against? I have a Fitbit and my heart rate pattern doesn't track well on them. I have a very low resting, a very high Max HR for my age, and my HR ramps up very fast to any kind of exercise.

I messed around with an AW at the Apple Store and it does seem to be quite responsive to quick changes. I'm quite interested in getting an AW someday.

Several different activities that make it hard for a optical heart sensor to be accurate. Tennis, weightlifting, basketball and HIIT. I found that the watch did an outstanding job.

4 and 5 can measure with higher Fidelity when you touch the crown using eeg, but that is not very useful during workout.

Have you heard or read if the 6 that is coming out will have an improved (3rd generation) heart rate sensor
