So, a few weeks ago, I saw a YouTube video on how to get Flash for your iPhone, but at that point I didnt have an iPhone so it was no use to me.

So my question is, is there any 3rd party plugins for safari, to let it run Flash?

you need to jailbreak and install imobilecinema through cydia, you will then be able to see most flash videos on the web, it will still be impossible to view sites based on flash, I'm afraid.
