Help, How can I keep all my information while jailbreaking?

Hi,
I went through the process of downgrading my iphone to 1.1.1 then got to the step where it says update to 1.1.2, dont restore. Well i got to the screen on itunes where it either wants me to set up a new phone or restore my old phone, which it found. I really want to keep all my contacts and pictures and music, what do i do?
