I for a new iPhone 13 today. I did a backup direct to iTunes from my XS (ios14), then saw I needed to update to ios15, so I did, then did another backup (I erroneously thought that my mac would store both backups).

Then, I restored the backup to my iPhone 13. it was only AFTER that i noticed that my photos on my iPhone XS are now all out of order (in my recents, all my photos are in no particular order, going all the way back to 2008). and my Notes are gone.

I thought my Notes were backed up via iCloud, but seemingly it is not. and my photos are all over the place. I'm less concerned about the photos, since I have them ALL backed up in Google Photos...but is there any way to restore my iPhone 13 to the iPhone XS backup that I did when it was still iOS 14 - I would like to get my notes back? I checked the Mobile Sync folder but only my latest backup is showing..but is there somewhere that the earlier one is saved? I do have a backup but not recent enough, sadly...

I'm so mad at myself. I've been using iTunes for backups since 2008 and I've never had an issue. I did not realize there were so many bugs with ios15...but i really had no choice..but had I known, I wouldn't have done that second backup..
 
The Mac should store all of your backups and offer you a choice of which to restore.
 
…and, by the way, I’ve had zero problems with IOS15, so what you are experiencing is not the norm.
