Help me out - Which imac should I buy from this link?

Long story short, I was given $700 in 'Future Shop' gift cards, and want to put that towards an imac.

Here is the link to the imacs available at Future Shop... which one would be best to buy? I think around $1500 total is the max....

And, are the computers they have available outdated? Meaning, are there newer models available, that they do not have yet?

The iMacs are current generation iMacs, except the C2D ones.
Take a look at Apple's Official Online Store what they offer: http://store.apple.com/ca/browse/home/shop_mac/family/imac?cid=WWW-NACA-BUYNOW-IMAC

And the one to get depends on the computational needs of yours, because there is a wide rift between the i3 and i7 models, power wise.

I just picked up a 27" iMac 2.66 Ghz I5, 4 GB Ram, 1 TB Hard Drive, for $1550 shipped....

I'd go that route.
