without any warning my sidebar favourites have disappeared from the finder sidebar (desktop, downloads etc)
They are still selected in the finder options but do not show.
Tried rebooting and restarting the mac but no dice.
Any idea why it's doing this and how to fix it please!

Try a safe boot then a normal boot.

Then in preferences for Finder, deselect something that you want selected, then reselect that thing. If you're lucky, an action such as that will 'nudge' the preference file into a less troublesome state.

OMG that's exactly what i did! feel like a right muppet now and to think I have a degree in computer science!

i remind myself, when i have an issue, to try the simplest things first (i used to get 'deep' into troubleshooting, and usually, it IS the simplest thing). glad that's resolved!
