Help needed on iPhone 16 Pro Max & Mac Mini Pro 2 - AI broken?

I'm in the UK and have Apple Intelligence up and running on my iPhone 6 Pro Max and Mac Mini Pro 2. A few things that I should be able to do (according to watching various YouTube videos) just don't seem to work. These are:

• Phone call transcription. I can record phone calls with no issue, but no matter what I do I don't get any transcription created for the recording.
• Adding to Notes on the iPhone. Supposedly if I have text on screen (thinking Amazon Kindle here) and I bring up Siri and say ‘Make a note out of this’ / ‘Save this to my notes', a note should be created with the text within in. Nothing happens.
• Apple Photos on the iPhone, if I have a photo on screen and ask Siri (i.e. using ChatGPT) to describe the photo I should be able to get a textual description of the photo. This works very well on the Mac, but nothing happens on the iPhone.

I'm using the basic ChatGPT account not signed in with a personal account.

This has been tried with iOS 18.2 and beta iOS 18.3. Makes no difference.

So am I missing something I need to configure somewhere, or is it broken in the UK?
