I've been trying to wean myself off MS Office for a while, to the iWork suite. The most challenging for me has been Excel -> Numbers. My Excel workflow and habits are very deeply engrained and proving tough to adapt after 25 years as a power user. Or I'm just not that bright. But either way, there are some basics I have not been able to understand that I'm sure others know.

For example:

Why does the column of row numbers cover up part of column A? This is super frustrating and I've been searching fruitlessly for a setting to fix it. This applies to spreadsheets on any device (mac, phone, ipad) including iCloud Numbers. I've seen tutorial Numbers videos where this is not the case, so I'm sure it can be corrected.

Note how column A is partially hidden under the column of row numbers. I can click and drag the work area out from behind the row numbers, but it will slide back underneath. AARRGGHH! The question then is: what software adjustment do I make so that column A is not partially hidden?

Again, this is an apparent default setting on all spreadsheets on all devices.

FWIW: My main device for Numbers use is ipad with keyboard.
 
I was able to reproduce this.
Drag the square at the top left corner away from its position to get the full cell back into view.
Next, drag it back until you see the yellow guidelines pop up and drop it right there.
If you drag beyond the guides, you'll get the issue again.
My screen recording was done in the iCloud app, but the standalone app behaves the same (except, it has a green circle instead of the square).

does not happen on my 11” iPP. Are these original Excel-tables? Check the column settings via the Inspector:

Best of luck in your jump from MS Office to the Apple Suite. I did the same a while ago (when Numbers supported pivot tables) and never looked back.
