I have 50 gb storage on iCloud and I have messages and Mail turned on as well as many others, what I want to know is if I turn mail and/or messages off on the iCloud storage does that mean that when I run out of space it will delete the oldest text or the oldest email first or how does that work? Please , thanks

Right now I have tons of texts and emails on my iPhone as I rarely delete anything, so if I turn off the iCloud storage for them I guess what happens is my question.

It depends if you're turning off that feature (like Messages or Mail) on all of your devices or only one. Depending on the feature, when you turn it off for iCloud, it may give you the option to save the data on your device. Here's an Apple Support article with all of the details:

Reading that, I see how I do it but my question is as I have ONLY an iPhone and my other stuff is PC or Microsoft, if I turn off the icloud for mail and messages would that mean the many texts and emails on my phone will start to disappear only when i run out of room and it will delete the oldest first?

Well, as the article stated, all of data in your Mail and Messages stored in iCloud will be removed from your iPhone. If you are offered an option to save any of the Mail and Messages data on your iPhone (and I don't know which apps offer than option), then there may come a point where your iPhone no longer has enough storage. You would need to manually delete emails and messages and other apps and data to make more room. There's no automatic mechanism to delete the oldest first.
