How do I get rid of email addresses in my mail that aren't in my address book?

Do you mean you want to delete messages from people not in your address book? Or do you mean you want to remove addresses from the autofill preferences when you're sending mail?
 
In Mail, go to the Window menu and select Previous Recipients. Here you can remove the addresses you no longer want.
