iMac 2019 with fusion running Big Sur beta. Takes in excess of 5 mins to boot. Bought ext SSD Thunderbolt drive. Did clean install runs fine. Now how do I get my files and apps over to my new SSD please?

you should be able the files to the ssd drive
but i dont know if you iMac works, or very slowly
beta version will do that sometime hence the phrase beta

Hi Pedro007,
you can just do a "Drag and Drop" from your Macintosh HD ( Internal ) to your External SSD.
May be, you should have to re-install some Apps ( not those furnished with Big Sur ).
It's a long time procedure but the best after a clean intall. By doing like that You generally avoid the copy of bad system files in your new and clean SSD.
I've had many problem with an iMac 2017 and I used this way to get all my files and documents.
Have you done a Time Machine Backup?

Many thanks. I have a Time Machine backup, but I think the problem is it’s a beta and hence a different version to the clean install on SSD?

I haven't tried Big Sur yet but you can have CCC exclude folders and files from copying, so you'd just need to exclude the system files/folders.
Good point, this looks like best option. Many thanks.
