Does Hey Siri work without having to be plugged into power? I'm deciding if I want to upgrade I love that feature but hate having to be plugged in.

That would realistically require new hardware to support that without additional battery drain. So it might be supported, but in new iPhones/iPads/etc. in the future.

I was hoping Apple could figure out how to make the motion coprocessor somehow allow for this, but I'm not sure if it'd be possible or not.

works with ear pieces... will this always has worked that way.
How exactly does it work with earpieces? Do you mean that it will respond to that once Siri is actually launched and is on the screen?

with your ear piece in say "hey siri" and Siri will activate. I haven't tried its with my bluetooth running headphones or speakers yet. But it works with the stock iPhone headset

That doesn't work unless the phone is plugged in as well or Siri has previously been activated and is up on the screen already from earlier use.

"Hey Siri" without being plugged in will come with a hardware update. They might make a special low-power chip to run in the background and listen for that specific activating phrase. No idea when they would incorporate something like that but it will happen eventually. If the 6S doesn't get some of the rumored new camera capabilities then it's more likely Apple would go for that in the next update.
