Is there such an tweak to stop me accidently updating a certain app that I need to keep the current version of?
 
App Update Hider or something like that. Never used it so I can't speak on its stability or features
 
Open iFile and go to var/mobile/applications/(whatever app), and delete the iTunes metadata file. Open the app store again, and the update will be gone. :)

What if you want to update it later? If you ever plan on updating that app again can you just move that file to a safe place and then when you want to update the app, you copy it back? Or is it easier to just delete the app and then install it again?
