Is a MacBook Air M3 8 core CPU and 8 Core GPU going to last a good 5-6 years for a high school/college kid for general word processing/web browsing etc?

Caveat: I'm using an M3 now because I spilled coffee on my M1 too many or one too many times. It still works, but track pad and screen do not function too well. But wife is still on her M1 and it is fine.

Easily. I would opt for 16/512 if possible in case they want to add some more intensive tasks to their general workflow in the future.

Yes. But make sure it has 16gb of RAM, and a 512gb SSD if possible.

And be sure to check out the Education and the Refurbished sales sites online - usually buried in small print at the bottom of the Apple Store page. Afford yourself a little discount, but with all the features of the retail store - including AppleCare+ if that's something you're interested in. (Hint: You should be for a mobile device - especially rough and tumble life at school / university. And you can pay it monthly, so not a further shock to bank account).
