Why in god's name would "Home Fax" be the default option when adding phone numbers to contacts in the Contacts app? Is there any way to change this? Yes I know I can click and change it each time but should I have to? Shouldn't "Mobile" be the default? Wouldn't that be logical in every way? The list order isn't even alphabetical or anything. I can't fathom the reasons for the order: Home Fax, Radio, Home, Mobile, Work, Work Fax, Assistant, Company Main, Pager, Car.

Sounds like something is adding those entries in to your contacts app. Maybe you have an exchange email account setup to sync with contacts. Some of those aren't even in iOS.
 
You'd have to go to settings app and check the email accounts that are setup to sync. within their menus you can see the typical Notes Email Calendar and Contacts. You'll see which one it is.
 
I run into this same topic even on iOS 10.3.3!
Can't find a place to change the order or get the default to be mobile as I'd want it.
 
Those labels the OP listed definitely sound like they're from Exchange. I chose to park my contacts with my Google account because of Exchange behavior.
