Not sure how you were doing it previously AFAIK it has never been supported for macOS to output to a stereo pair. I couldn’t get it to ever work apart from a workaround like this one (although I got rid of mine for other reasons)

Yeah, previously, I can do it like this, but with 11.1, this approach becomes unstable and it may disconnect after playing YouTube video for 3 to 4 mins

Can anyone use HomePod stereo on MacBook Air M1?

HomePod Stereo used to work on MacBook Pro 2014 (10.15), but not support for 11.1.
Playing in stereo on my M1 Air and 2018 Homepod pair as I type. No problems what so ever using Apple Music which has been supported for a long time in Mac OS. No work around needed. Other programs do not work in my experience. Home pod minis are another issue...

That only applied too iTunes/Apple Music/TV apps. We are referring to system wide support. I want notification sounds, audio from web browsers, and all system audio to be routed to the HomePods as a Stereo pair instead of a single HomePod.

You can use Rogue Amoeba's AirFoil to redirect audio. Since it does not fully support AirPlay2 required for Stereo, it's a little convoluted:
- Unpair the HomePods
- Name the left HomePod something like "HomePod Left," the right one "HomePod Right."
- Re-pair for use with Apple Music etc.
- In Airfoil select System Audio or whatever and redirect to both "HomePod Left" and "HomePod Right."
You will have Stereo redirected.
