On the new MacBook Pro's, how are the icons managed if there are more than fit in the menu bar space right of the notch? As a test I kept adding icons, it seems like it can handle around 15 (depending on the width; some are wider than others), and around that number of icons I have seen at least 1 icon disappear - when I remove another icon it comes back. I have not been able to find a way to scroll the menu bar. I also see as you add them, the icons get smaller for awhile.

Are the icons scrollable if you have too many for the menu bar area right of the notch? Or do you just have to manage how many are up there that an icon does not disappear?

For me, the last thing you said. The bar appears to contract/stretches the icon margin to a certain point and once past that point, the icons start to disappear. Even the icons order has to do with the formula. Very erratic behaviour if you ask me. I think (hope) this will (could) be configurable in the not-so-far future.
Entirely sure that at first will be configurable by some third party app. Then, when Apple realises that they messed up with the fudging notch, with an in-house cryptic System Setting.
Oh, btw, I didn't find any scrollable area in the bar so far... My "solution" was to configure all the System icons the Control Centre let me configure inside it.

I've been using Bartender to offload the menu bar icons that I use less often (but can get to them quickly via the pop up secondary menu bar when needed).

...this is on my 14" MacBook Pro. I can fit a few more icons on my 16" M1's menu bar.
