I prepared someone's computer and now it's stuck with my Apple ID when the user tries to update apps. How can I edit the Apple ID?

You'll need to turn off "Find my Mac" and then remove his computer from your Apple ID. He then can assign it to his Apple ID. Do that from your iCloud account.

It sounds like you installed apps using your Apple ID. You'd need to delete those apps and have the user sign in with their ID and download the apps again.
