I'll set up the phone as a new device but do not want beta software on it.

I have the beta on my 14PM and surely don't want it installed on my new phone.

How can I avoid beta getting on my new phone?

Apple does not release it's products with beta software. You'll get your phone with iOS 17.0. And if you decide to wipe the phone, 17.0 will be signed for the 15PM so that's what will install - not beta software.

I realize this. Just worried as I've used my Apple ID to download beta software on my iPhone, watch and iPad and surely don't want any beta software downloading automatically on my new phone.
 
The new phone will ship with the released version of iOS 17. Turn off beta software in Settings > General > Software Update to prevent future betas from being installed.

I believe that is off by default. You have to actually be aware of this and switch it on for that to happen.

The setting to install beta software is off by default. You have to actually switch it on, which means you are aware of what you're doing. And you don't want this so I don't see you switching it on.

iOS 17 will release before preorders ship. You have zero to worry about here.

It's like asking for help to keep the sky blue.

Your iPhone will download the software version matching your latest backup. If the backup happens in beta iOS, it will attempt to download beta, as per my previous experience. You will have no input over this.

The best way is to either setup as new, or wait until iOS 17 is released. Newer version iOS will accept backups made for older iOS versions.
