I've got an iMac that I'm using as an HTPC. I'm using the mini-toslink connector to connect to my surround sound system for my TV. However when I'm not using that, I would like stereo sound from my computer. Airport express is not an option because I want to watch videos on the computer and it's ridiculous that I should have to pay $100 for the functionality. Is there some USB to 1/8" jack conversion or better yet a bluetooth to 1/8" jack product?

if the headphone is occupied by the toslink, well... if one of the speaker systems has an output, put that into the input on the second using whatever adapter s are necessary. If not, then maybe a USB sound card of sorts to give you that second output.

I use a headphone splitter on my MacBook. One line goes to right and left speakers and the other goes to the subwoofer for bass. It is not ideal, but it works pretty darn well.
Yeah i do the same on my iMac

what about a headphone splitter?

That won't work for an optical digital audio signal, though, which I believe is what the OP wants to do.

How about something like this?
