Do I just go to ATI's website and download the latest release of the graphics drivers or do I have to wait for Apple to make an Bootcamp version of the drivers?
 
For non-Apple cards, go to the website.
For Apple cards, put in your burned Boot Camp disk or Leopard disk.

So I have a ATI Mobility Radeon 2600 PRO. Does that mean I can use ATI's own drivers? Or does Bootcamp prevent me?
 
You can use the ATI drivers if you want. Choose the ATI Radeon HD2600XT drivers. Or you can use Mobility Modder to modify the ATI drivers to be Mobility drivers.

Any ATI drivers after 7.12 (7.12, 8.1 or 8.2) will improve performance from 10-50% depending on the game. New set coming out in a week or two (8.3).

That would work too but the bootcamp drivers are at least one rev behind (not that big a deal really).
