I don’t think you can.

I’ve tried to delete the _MASReceipt folder from an App Store app and its associated receipts from /private/var/db/receipts/, but it still shows up in the Updates section of the App Store. I’m not sure if notifications about the available update will be displayed again.

The app I don’t want to update at the moment is AdBlock Pro for Safari https://apps.apple.com/app/adblock-pro-for-safari/id1018301773 because the latest version doesn’t work properly.

If I recall correctly, you can Hide the purchase, which will, well, hide it.

App Store > You Apple ID to get purchase list. Hover over program/app to get three dots, "Hide".
