I have been trying for some time now to transfer the actual songs I want onto my iPod but I feel like I want to pull my hair out! Is there away of just deleting the songs you dont want and exchanging them while keeping some songs on your iPod?:(

Using iTunes? If you plug in your iPod, wait until it comes up in the sidebar. Then click on it, and it should come up with an overview of your iPod, and some checkboxes below. There should be a checkbox 'Manually Manage Music'. If you tick this checkbox, and click on Apply down in the bottom right corner, then you can click on the Music Tab underneath your iPod in the sidebar, and delete whatever you want. You can also click on the Music Tab of your iTunes library and just drag to your iPod whatever you want. I hope this helps.
 
If you don't want to manage your music manually or use the Check boxes in the Library, then there is still another way. Create a Playlist, and move only the songs you want from your Library over to it. Then connect your nano, and under the Music tab, check Sync Music, select From Playlist and make sure your wanted playlist is the only one that has a check mark beside it. Finally, turn off "Automatically fill free space with music" to avoid getting random tracks you don't want.

Later, if you want to "delete" a song from your nano, remove that song from the Playlist and re-sync. In fact, you can revise the Playlist as you like, when you like, even if the nano is not attached; the next sync will update the nano with all changes.
 
How to uncheck all songs

don't know if this helps anyone but,

if you have thousands of songs (like me) and you want to only sync checked songs to a device, but all your thousands of songs are checked, and you want to stab yourself in the eyeball at the thought of unchecking all the unwanted songs, one-at-a-time, here is a short cut I discovered by accident:

press command button and, at the same time, click on a check box for any checked song. they all will miraculously uncheck.

You should be able to Ctrl+Click or Shift+Click to select multiple items at once which you can then right click to "Check Selection" all at once. I know for certain that it works in Windows and would be really surprised if OS X didn't have a similar selection method. I don't use Mac enough to know if it's the same button combo or not though..
