I have three 32" Samsung curved monitors currently connected to a PC using Display Port and HDMI. I am about to remove the PC and buy a Mac mini. I just looked on the monitors and I have USB-A, USB-C, Display Port and HDMI.
Sorry if this is common knowledge...First Mac desktop.

You can use the HDMI port for one monitor and then use HDMI to USB-C cables for the other two monitors. This works fine and how I am running there monitor with my M4 Mac mini.
Great! So I can buy three of these and be ok?

You just need two. The mini already has an HDMI port for one of the displays...and you'll probably want to leave one of the USB-C/Thunderbolt ports free for other things (it only has three in the back).

USB-C to DisplayPort cables will work as well, and is usually the preferred method for best performance and higher bandwidth. I use a couple of these with my MBP.

Depending on your monitors, USB-C to USB-C cables may work as well...you didn't give us a model number.

My USB-C port on the Display can be connected to USB-C on the other side too and then behaves the same as Display Port. But Apples USB 3.x ports don't support it. I have to use Thunderbolt, same for the dock.

The cable is USB 3.2 Gen2 (full featured) and came with the display what also has a standard Display Port and two HDMI Ports (2.0 and 2.1).

HDMI on Docks and Hubs often are 2.0 only and with that I only get 60 Hz for 4K UHD.

Considering that your monitors have USB-C you could've just connected them via USB-C with the advantage of not only connecting the displays themselves, but also their internal USB hubs so you can use the USB-A ports on your monitors to connect peripherals to your Mac.

I didn’t realize the monitors had usb hubs in them.

Seems like you’ve solved your query but just wanted to say enjoy your Mac mini, it’s a great device and I’m sure you’ll love it! (Damn did I sound like Tim Cook there? 😂)

Which spec did you go for?

Thanks! I got base and ordered the 3rd party 2tb storage expansion.

You have not given the Samsung model number. So may or may not.
I stated in the first post they have USB A/C
Just know that you need a second Mac to flash the OS in this case.
I have an M2 MBA
Of course. I just assumed that OP ordered something like this. Probably not the case though, my brain saw "replacement" instead of "expansion".
You read correctly, I am removing and replacing the OEM storage.
