How do I delete addresses

Every person I have emailed gets stored in my mail dropdown - how do I delete these?

You can bring up a list from Window menu -> Previous Recipients and delete (selected or all) previous addresser there.

There's probably an option in preferences that you should deselect, that is automatically adding people you send to or receive from.
