Hi everyone!
I'm kinda desperate. I looked everywhere on the internet and people seemed to say there was a folder inside Library>Application Support called iWork, I looked both in the general Library folder AND in the User Library folder's Application Support and no iWork folder! I even checked to see if it was a hidden file but no luck! I bought Pages, Numbers and Keynote separately on the App store a week ago and I am running Mountain Lion.

Can anybody help me delete all of the default templates? I want to replace them with my own and get rid of the default ones.

In Finder you should have a quick link to the "Applications" folder on the left side. In there is where the iWork folder should be. Right underneath "airdrop". Im not sure what is in the iWorks folder, but if it just has the Pages, Numbers, and Keynote apps, right click the "Pages" app and select "show package contents" The templates should be in there somewhere.

Awesome! You are right! While there is no iWork folder in applications (Just the individual apps) I did find the templates while opening package contents. Can I safely delete all the default templates or is there a risk of something bad happening?

There is a risk of updates breaking.
 
Okay, better leave them be then... Is there a way to have my custom templates in categories like the default templates? What I mean is this, to have a category under "My Templates" such as "Letters, Invoices etc..."?

Also is it possible to rename the "My Templates" category?

The name of your categories are controlled by the names of the folders in your "Library/Application Support/iWork/Pages/Templates/" folder.
