I have used command R to wipe my HD on my iMac 27 and have Catalina downloaded to a thumb drive. How do I install it freshly on the iMac. I don't need to restore anything this is just a fresh install. I have some hardware that does not work with Big Sur. Thanks.

Is it a bootable Catalina thumb drive? If so you should boot from it (option key at boot).

I hope it is a LATE 2014 27". Anything older is not supported.
