I've decided to purchase a Canon A710 IS. I'm relatively new to all the terminology surrounding digital cameras. I really want to be able to take fairly high resolution videos with this camera. All reviews say it will as long as it has a fast SD card.

How do I know what card is fast enough and what isn't?

On the specs page it says that in high quality mode it records at 1920KB/sec,
so I guess that a card capable of writing 2MB/sec sustained should be enough
(for example, Class 2 SDHC).

You probably need a faster card for continuous shooting of stills.
