I only see the option to make the screen saver come on. I just want to lock people out and make the screen go off.

You can set it to a blank screensaver and have the screensaver set to lock as soon as it's activated. I have my work-issued Mac set up this way.

System Preferences --> Desktop & Screen Saver --> Hot Corners... ---> Put Display to Sleep

Assuming you have a MBP, you can use a keyboard shortcut. If you Mac has an optical drive:

Control+Shift+Eject

If you don't have an optical drive:

Control+Shift+Power

You can also just push the power button for about a second. It will do the same thing. But pushing it too long will turn the machine off.
