My iTunes sucks. It won't update iDevices and it won't sync photos directly from my photos folder (says some stupid archive is missing?!). When I try with iPhoto instead it will only list some of the photos in each album - some albums are even empty. So how do I reinstall iTunes without losing the stuff mentioned in the topic title?

You will need to keep a copy of the 'iTunes library' file.

Its normally located in the folder where your music is kept.

Edit* Probably a good idea to keep the XML file also.

Thanks man. When I have reinstalled iTunes, can I just replace the new music folder with the old one I've backed up?

I can copy all of these from the iTunes folder right? That shouldn't also copy whatever is causing my current problem in iTunes?

When opening iTunes for the first time, hold down option and iTunes will let you select your previous library file.
