I dont want iCloud enabled on my Macbook Pro, i do have iCloud turned on my iPhone 11 Pro for calendar and contacts, Is there a simple way copy my Contacts from my iPhone to my Mac without turning on iCloud? i just want to have a local copy of my Contacts on my macbook pro without having iCloud turned on and constantly synced with iCloud

Your iPhone will be the master copy? You don't care that you would lose any changes you've made on your mac when you import the data from your iphone, if it is even possible. If you have very active contacts and calendar that will be a world of pain.

Open iCloud Contacts
Select All
Export vCard from menu.
That's it.

I think Calendars can't be downloaded. But you can simply sync calendars attached to an email account, so you don't have to turn on iCloud on your MacBook. The same for Contacts. You don't have to enable iCloud, you just have to enable Contacts for the eMail account you wish to be visible on your Mac (and iPhone). So if you have any email account set up on your Mac, syncing contacts and calendars will be a breeze without iCloud enabled.
