I have 2 TB of iCloud storage. I’m thinking of getting the new iMac with only 512 GB or 1 TB of internal storage for macOS and apps and get a external for my data storage.

Could I use my 2 TB iCloud storage as my data storage without getting a separate external SSD?

Also, some folders and files I don’t even need on a monthly basis or even yearly basis, and just want to keep those files. Any way to un-download those files and not have them deleted?

I believe if you right click a file or folder, there should be a "remove download" option.

Turn on Optimize Storage in the iCloud/Apple ID section of System Preferences. Older files you don't access often will be stored in iCloud and removed from your drive. This may be of some help, but I suspect it won't be enough.
