How do you accurately specify the correct amount of RAM for your for your needs?

I currently have a MacBook Pro with 16gb of ram.

I am upgrading to 2019 iMac. It comes with 8gb of ram installed. So the choice for me is to get (8*2=16gb) or (16*2=32gb). The first choice will give 24gb total the second choice will give 40gb total ram.

I use Photoshop, Illustrator and InDesign I do regularly come under Memory pressure with the 16gb I have currently.

I don't want to waste money on redundant RAM, but I would don't mind spending it if it will be needed.

Can anyone with experience using these programs advise me if 24 gb is enough or should I go for 40gb?
