How do you add contacts of your friends iPod or iPad

So i have a lot of friends using iPod touch or iPad, so basically they dont have iphone with iOS 5 to be texted, so if i wanna text my friend's iPod touch, how am i able to text her when she doesnt even have a number?

They need ios5 as well and then you can use iMessage with their email.

It uses an email address that they register with the messages app on their end. Facetime uses the same method to find people you want to contact on non-phone numbered iOS devices.
