i recall seeing the option somewhere in itunes but i denied it.
can someone shed some light?

Your iPhone is automatically backed up when you sync. I'm not sure what you mean. In fact, if you look at the iPhone tab in your preferences, it will show you all the backups its made. To confirm, I've blown away my iPhone and restored it, and all my notes and other material went back in place, same as before. Whatever isn't included in the backup, like media, you just RE-Sync. That's about it.

Are settings backed up? What about network information/safari information?
