How Do You Change Colors of Items In Notes?

I would like to change the color of these toolbar icons which is also the color of links and highlighted titles in the sidebar list. The current color is shown below which I think of as some cross between yellow and mustard. I’ve looked through settings and have not found a way to change this.

That's in System Settings > Appearance > Accent color.

The only Appearance settings I find are in Accessibility and nothing there about Accent colors.
