How do you change icons?

This is probably a really stupidly simple question that could be answered on the guides or with a quick seearch, but what the hell:
How do you change the icons? I have donwloaded new icons, and how do i make them the default icons? So a new Desktop icon, new applications icon etc and also new icons for music, images and text files.
