As above really... I find that every time I go to the app store there are so many apps in each category that I give up wading through them all. Although it isn't bad if you want something specific (because you can search for that), it makes it pretty hard to casually browse. I haven't really found any decent app review sites either. Any recommendations?

I usually pay attention to what apps people talk about here or look at the top apps in each category in itunes. I also check appshopper.com at least once a day and look through the new apps. Also appshopper is great for waiting for price drops and being alerted of updates for apps you have. Make an account and add the apps you own and they'll email you when there's an update. If you make a wish list they'll email you when there's a price drop. I've saved a good amount of money since I started using the site.
I've learned you can't really trust reviews on the app itself within the iTunes store (unless there are hundreds of them scattered between the various stars).
I look for recommendations right here.

I think one can also infer the quality of the app from the user interface. While there are plenty of good apps with great features but not a very fancy UI, those with custom UIs tend to be really well thought-out and at least the developers have spent time to try improving the user's experience.

Adding to an "older" thread....
I look at Appshopper daily to see what is new or had a drop.
Otherwise, i'm not normally looking for random apps, so searches on my topic normally turn up a decent list to weed thru. Then i come back here and see what anyone might have had to say on it - and check the website for any additional screenshots or forums.
Otherwise, i read the "what is your favorite app" type of threads and have found some i use that way.... there are too many i'd LIKE to try though, the thing driving me crazy is the lack of ease in sorting them on the Touch. I'd really like "profiles" for apps to view. A daily list, a game list, a younger kid game list and so forth....
So for me, the first shot someone gets is their screen shots and description. A peeve is if it's an app for collecting data - show me that screen. I don't care if it looks like a million bucks after it is IN, but if i hate putting it in, i won't use it. So please show me that.

I watch the "Top Apps" in the app store. Also read Crunchgear Blog and TUAW as well as other tech blogs that might talk about a decent app.
Lots of those are good sites. I also like yappler.com because you can enter keywords and then narrow down the search and sort by user ratings. You can also just browse the top rated apps in a category.
