What im talking about is not the actual size but how large it is compared to the 13 Pro.

(6.1") 13 Pro - 3095 mAh
(6.7") 13 Pro Max - 4352 mAh

Thats a +1257 mAh difference. Roughly +40%
That's a staggering never-before-seen increase!
How did they pull that off ?

For context, here are the capacities of some past models:

(6.1") 12 Pro - 2815 mAh
(6.7') 12 Pro Max - 3687 mAh ( ~roughly +30% )

(5.8") 11 Pro - 3190 Mah
(6.5") 11 Pro Max -3969 mAh ( roughly +25% )

A 0.6 inch difference from 13 Pro to 13 Pro Max yields 1300 mAh more !?

Here's how Samsung's phones compare:

(6.1") Galaxy S21 - 4800 mAh
(6.7") Galaxy S21+ - 4000 mAh

(6.1") Galaxy S22 - 3700 mAh
(6.7") Galaxy S22+ - 4500 mAh

A 0.6" increase in Samsung's phones yields only 800 mAh more, or roughly +20%

What explains the +1300 mAh increase going from 13Pro to 13ProMax ?

Apple could put a larger battery in the 13 Pro, but they purposely do not in order to stick within profit margins and also upselling to the larger model.
Lol. Ah yes, look at all of that unused space for battery. Damn profit margins!

Newer battery chemistry.

The 13 Pro Max uses cells running at 3.87V vs. 3.83V for 13 Pro.

The SE3 also uses this newer battery chemistry with higher voltage. It's the reason why SE3 has 12% higher capacity than SE2 even though the battery is the same physical size.

The smaller 13 Pro also uses 3,87V cells, look here (13 Pro battery l-shaped on the left side, 12 Pro battery on the right side).

I'm not so sure about that! 0.04V is not "new chemistry" levels of improvement lol. That's very much within the range of normal max voltage variation of lithium ion cells.

And what bearing would that have on mAh? If anything, had Apple put a higher voltage battery in there they could reduce the mAh to supply the same overall w/h. That goes against OP's point of the PM having a very big increase in mAh over the regular Pro.
