Exactly what data is brought over and what isn't? How long does it typically take?

Supposed to be everything an encrypted backup/restore from your computer will do - passwords and health data included. It's how I did it last year.

I tried probably 15 times, with cable or without, but it always remained stuck after scanning the QR code thingy. No idea what was wrong, but there was no way to make it work...

Sounds like an activation delay not a transfer issue...see other threads.
