Usually the bar code can be used as a proof of purchase, but since you've used it, they'd be out of luck.
As for the receipt, if you give it to the buyer, make sure it doesn't have any personal information on it (i.e. credit card number, etc.). I think legally, the warranty would be transferred to the new owner, however, the warranty period began when you purchased it.
Also, I think Apple has a way to go into their system to see if items are still under warranty. But that may not apply to ipods.
