I've got an eBay Nike band, and it's pretty nice. But, I've read how much better the Apple elastomer is than the material in the knockoffs. In what ways is it so much better, or do I just need to buy one and see for myself?

The material and the "flushness" of the adapter is just nicer. It really just depends on how picky you are. When I first got the watch I bought 5 very good looking knockoffs. Any random person on the street would never know the difference. I think I wore each of them once before I put them in a box and never touched them again. They were lint magnets and had more play in the adapter than I wanted. The real ones are also a bit thicker than the knock offs I had.
FWIW, I bought a knock off nike band and hated it because of the material and it had some wiggle in the adapter. I gave it to a friend and it is now the only band he wears.

Huge difference in Apple's flueroastamer bands over third party band manufacturing. Apple's flueroastamer bands also have a much denser, supple feeling to them over the third party rubber bands.
Fluoroelastomer comes from the two words "fluorinated" and "elastomer". Fluoroelastomers are famous for their durability resistance to heat, oils, solvents and fuels. It is not a material that will stretch out easily, get damaged by extreme heats, or get deformed by being excessively sweat on. It is also much less prone to induce any allergic reactions than, for example, latex.
Where as rubber, doesn't have the consistency and durability as Flueroastamer does.
What's the deal with the sizes on Apple's website? It says S/M and M/L. Is that a aingle size, because I can't figure out how to choose one or the other.
They give you 3 different pieces: a small/medium one, a medium/large one, and the one with the pin in it. Here's a pic for reference:

I had one 3rd nike replacement band where the material in the hole area cracked sending the ceramic watch to the floor.
This hasn't stopped me from making this recent purchase.

I feel as if the knock off Nike band unhooks itself easily - from the hole section - almost as if the hole swell, and thus easily move.
On three occasions, it did that to me, and I almost lost my SSSB 42mm. I wasn't impressed. Quickly I realized this is why it's best to simply order directly from the likes of Apple. Does it cost 10 times more, certainly...!
