Hey,

I’m curious about this since mine always updates for 30+ mins with gigabit internet and 5GHz WiFi. Is this normal?

Are you asking about the time it takes to download, to prepare the installation, or to actually install? Each part can be different. Seems like the preparing part has been taking longer across many updates over the past year or so. The download can also take a while depending on your connection, Apple's servers, connection in between, etc.
 
Don't forget, there are a lot of folks downloading it right now. It also depends on which Apple server you're connected to. 30-45 minutes give or take from start to reboot.
 
Read the screen closely. It probably says "preparing" rather than "downloading". The actual downloading is fast, but the prep takes ages.

Edit: Updating my 6S now and the download is taking its time. My 11 was fast, but maybe I beat the rush with that one! I wonder whether the phone can do some prep while it downloads, as the download phase took ages on my 6S but the prep phase was really fast.
